Zero Peach Cobbler
I found a cool recipe online at Living A Changed Life. She made a berry cobbler and I figured I could do the same with peaches. I added my own pizazz to it and this is how it goes.
Ingredients needed: Bag of frozen peaches, Sprite Zero, white/yellow cake mix, brown sugar, cinnamon.
1. Gather up your ingredients.
2. Spread frozen peaches on a greased baking pan.
3. Sprinkle brown sugar on top.
4. Add cake mix evenly.
5. Sprinkle cinnamon on top.
6. Evenly add 1.5 cups (or 1 can) of Sprite Zero.
Bake at 350 degrees for 40 minutes. Let it cool for a while and serve warm.
As with any "diet" and "cheat" food, be aware: this is NOT going to taste like your grandmother's Christmas cobbler. It's not. This is a low-calorie replacement to something that may otherwise make you gain 2 pounds just from sniffing it.
Let me do some math here and see what kind of calories this is going to cost you.
1 box cake mix: 1600, 12 oz. Sprite Zero 0, 3 cups peaches: 150, 3 tbs. brown sugar: 100, 1 tsp. cinnamon sugar: 50. Add it up and the entire pan is 1,900 calories. Don't eat all of the pan in one sitting, of course! I divided my pan into 12 servings, meaning each one is 158 calories.
I put this recipe through the ultimate taste-test, my husband. He is a peach-cobbler LOVER. I didn't tell him any of my diet-ingredients, but he guessed the cake mix...the smell gave it away. He liked it a lot. His only critique was that it tasted more like a cake-with-peaches, not "cobbler."
